These are the grains which I have been able to find the names of the prolamin protein and the percentage of protein in the grain which is prolamin.
It is easier to find out how to extract prolamin from other grains than to find the names and percentages. For those that are interested, refluxing in alcohol will do the job but the key thing here is that all grains contain prolamins. These have been implicated in autoimmune diseases.
